Best Use of Bananas That are on Death's Door

A few days ago, I had some bananas that were on their last leg....on death's door I like to say. So, I made these muffins and they were perfect. These may have been the most moist muffins I have ever made using bananas. Whole wheat flour has become one of my newest loves. Try them and you will love then, especially if you like banana bread.

Whole Wheat Banana Muffins:

1/2 cup butter
1/2 cup packed light brown sugar
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp vanilla extract
3 mashed ripe bananas
1/4 cup honey
2 eggs
2 cups whole wheat flour

Preheat the oven to 350. Line or grease a 12 cup muffin pan. Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg, and vanilla in a medium bowl until smooth. Add the mashed bananas, honey and eggs, beating until smooth. Add the flour, stirring until smooth. Divide batter into the muffin cups. Bake the muffins for 25 minutes.

A"Peel"ing Bread

I looked and looked for this recipe on my blog, and could not find it. Then I realized I thought I had lost the recipe. Frantically, I called my mom, who had it in one of her cookbooks. Well, then I told myself I would post it on my blog so I would not lose it.

Sure enough, I looked again yesterday, and it appears as though I still never posted it. What is it, you ask? It is my all time favorite banana bread. Luckily, I had at least written the recipe down this time, so here it is! Now, I will have access any time I want to make this.

I used to make this every single weekend, but we have not had it in quite a while. So, it pleases me to no end to be able to tell you it is still just as good as I remembered, and maybe even better.

Banana Bread:

1/2 cup oil
1 cup sugar
2 eggs, beaten
3 bananas, mashed
2 cups self rising flour
3 Tbsp. milk
1/2 tsp. vanilla

Preheat oven to 350 degrees. Combine the oil and sugar on low speed using your mixer. Beat the eggs, one at a time, and add them to the mixture. Mash the bananas and add then in, combining really well. Incorporate the flour while the mixer is on low, so you don't get flour all over yourself. Stir in the milk and vanilla.

Lightly grease and flour a loaf pan. Pour batter in, making sure it is evenly distributed. Bake for one hour until toothpick inserted comes out clean. Enjoy for breakfast, lunch, or a snack. It is sooooo good.

I will be linking this recipe to Mommy's Kitchen for Potluck Sunday.

Goin' Bananas

This yummy recipe is one that my sister in law, Kerrie, gave to me. I really do wish we were able to see James' family more. They live so far away from us. When we make this, we always think of them. I loved this dessert growing up, but again, I did not like for anyone to make this using eggs or with a meringue. That is why this is so perfect. It is also very easy and looks so pretty in a trifle bowl. Making this also brings back memories of when I wass little. My mom took me to get ingredients for this once, and then we locked ourselves out of the house! Don't ask. Fear not though, we were able to make it the next day. I remember it warm from the oven. This version is cold, but so good.

Banana Pudding:

1 1/2 cups cold water
14 oz. sweetened condensed milk
2/3 cup banana instant pudding powder
3 cups heavy cream
1 box Nilla wafers
3-4 medium bananas, thinly sliced

Blend cold water, condensed milk, and pudding powder together using an electric mixer on low for 1-2 minutes. Refrigerate for 4 hours until firm. After pudding mixture has set, whip cream until peaks form. Fold pudding into whipped cream. Place layer of Nilla wafers in bottom of trifle bowl. Cover with a thinly sliced layer of bananas, followed by a layer of pudding. Continue alternating layers. End with pudding as top layer. Garnish top with crushed wafers. Refrigerate for 30 minutes before serving.

A Rainy Day!

Today, James and I had a fabulous day! It rained ALL day, and it was so nice that both of us were able to stay home and just enjoy being inside and being together. What do you usually find yourself doing on a rainy day when you are home? We decided to bake. What fun we had! Now I mentioned before that James is slightly (understatement) afraid of the kitchen. Today, he was a great help (and I dare say I think he had fun too). We made Butterscotch Banana Bread. It is someting that had never been made before here at our house, but in recent weeks, we have heard so much about it. So, we went for it and tried something new. We liked it too.

Butterscotch Banana Bread

2 bananas
1 3/4 cup all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
3/4 cup sugar
2 eggs
1/4 cup melted butter
1/4 cup milk
1 cup chopped nuts
6 oz. butterscotch chips

Preheat oven to 350 degrees. Sift together the flower, salt, baking powder, baking soda, and spices. In separate mixing bowl, combine mashed bananas, sugar, eggs, and melted butter. Combine the wet and dry ingredients. Add in the milk. Stir in the chips and nuts. Pour mixture into a greased and floured loaf pan. Bake 1 hour.

I will always be partial to my original Banana Bread recipe. However, this is something that we will make again.
