Turkey Spaghetti Casserole:
1 medium onion, chopped
1 carrot, chopped
1 celery rib, chopped
1 Tbsp. butter
2 1/2 cups chicken broth
1 can cream of mushroom soup
1/4 tsp. salt
1/4 tsp. pepper
2 1/2 cups cooked, cubed turkey breast
6 oz. uncooked spaghetti, borken into pieces
1/2 cup shredded Colby and Monterey Jack cheese
Saute the veggies in butter until tender. In a large bowl, combine the broth, soup, salt, and pepper. Coat and baking dish with cooking spray. Layer turkey, spaghetti, and veggie mixture. Pour broth mixture over the top. Cover and bake at 350 degress until spaghetti is tender, 70-80 minutes, stirring once. Uncover and sprinkle with the cheese paprika.
