Yesterday it poured rain here. It was a perfect, cool day. The only thing that would have made it even better would have been if hubby and I could have stayed in all day. Instead, I brought a ton of work home. It was just the right night to have one of our favorite soups. This soup is so incredibly easy, but yet it is so good. Serve it with grilled cheese.
Tomato Soup:
32 oz chicken broth
28 oz. can tomato soup
28 oz. can crushed tomatoes with italian herbs (Progresso)
Pulse the crushed tomatoes in the blender until they reach your desired consistency. Then combine all ingredients on a dutch oven over medium heat. Simmer for about 20 minutes for the flavors to combine.
