This recipe has been another favorite at our house. It is a quick and easy recipe. We often have leftovers, but they keep very well.
Chicken Parmesan:
4 chicken breasts, pounded thin
2 eggs
1 cup Progresso Italian bread crumbs
1 tsp. garlic powder
1 tsp. parsley flakes
1/2 tsp. pepper
1/2 cup shredded parmesan cheese
1 jar Bertoli by Five Brothers Olive Oil and Garlic Marinara
3/4 cup shredded mozzarella cheese
olive oil
Preheat oven to 325 degrees. Heat 1/4 inch of oil in an oven proof skillet. Make the breading mix by combining bread crumbs, garlic powder, parsley, pepper, and parmesan cheese. In a separate dish, whisk the eggs. Dip chicken in egg mixture and then into the breading mixture. Brown both sides of chicken in the oil. Pour 1/2 jar of sauce around the chicken. Bake 25 minutes. Top with mozzarella and cook for 5-10 more minutes. Serve with spaghetti and remaining sauce.
