We just returned from a fabulous weekend getaway. Let's face it though, one of the highlights of a getaway is that you pretty much eat what you want. So, upon coming home, we are back to reality and trying to lighten things up. This salad is one that we enjoy quite often.
Buffalo Chicken Salad:
1 bag Romaine lettuce, chopped thin
1/4 lb. Buffalo chicken sandwich meat
1 cup shredded cheese
handful of croutons
1/4 cup sunflower kernels
1/4 cup Salad Toppings-(in my store, they are on the same aisle as croutons)
1/2-1 cup Tuscan House Italian salad dressing
Chop your lettuce and slice your sandwich meat to desired thinness. In a large salad bowl, combine all the ingredients. Toss well to combine. Enjoy!!
