Lasagna, Pioneer Style

This recipe comes from The Pioneer Woman. I made a few modifications to the original recipe.

Lasagna...

1 1/2 pounds ground beef
1 pound breakfast sausage
2 cloves garlic, minced
2, 14.5 ounce cans diced tomatoes
2, 6-ounce cans tomato paste
2 T dried parsley
2 T dried basil
1 tsp. salt

Cheese Mixture...

3 cup ricotta cheese
2 eggs
1/2 cup grated Parmesan
2 T dried parsley
1 tsp. salt

1 pound shredded mozzarella cheese
1, 10-ounce pkg. lasagna noodles

Bring large pot of water to boil. Meanwhile, in large skillet, combine ground beef, sausage and garlic. Cook over medium-high heat until browned. Drain the fat. Add tomatoes, tomato paste, parsley, basil and salt, and simmer on low for 30-45 minutes. In medium bowl, mix ricotta, eggs, Parmesan, parsley and salt. Stir together well. Set aside. Cook lasagna noodles. To assemble, arrange 3-4 cooked lasagna noodles in bottom of baking pan. Spoon half of cheese mixture over noodles. Spread evenly. Spoon half the meat mixture over the top, followed by a layer of mozzarella cheese. Repeat, ending with meat mixture. Sprinkle top with mozzarella. Bake at 350 for 20-30 minutes.
