I am sure most people can relate to the feeling that you have simply run out of ideas for planning dinner. If you have ever found yourself in this position, then what was it that you decided upon having for that meal? For us, we usually end up with chicken... Specifically, we end up with a rotisserie chicken. You have so many options with a rotisserie chicken. You can shred it and pour barbecue sauce over it, you can slice it and serve it with veggies, you can create a chicken casserole, make chicken pot pie, etc. One thing we like most is to make chicken salad. Since we are in the throws of summer heat, I felt that sharing this recipe comes at an appropriate time.
Chunky Chicken Salad:
1 rotisserie chicken, shredded 1 cup walnuts, chopped 3 ribs of celery, chopped (I leave this out, as we do not care for it so much!) 1 tsp. black pepper 1 cup mayonnaise 1/2 cup Honey Cup Mustard
Combine all ingredients together. Serve with grapes and strawberries on the side.
**If you prefer to buy chicken and cook it yourself, then you would need 1 3/4 lb. chicken breast tenders. Vary the fruits and nuts to your liking. Serve on bread for sandwiches, on crackers, or just by itself. Whichever you choose, I hope that you like it.
