Fun Finger Food

Hubby and I found this recipe about a year ago. Even though they are appetizers, you could have them as a light meal with soup or a salad.

Cheddar Ham Cups:

2 cups finely shredded cheddar cheese
2 pkgs. thinly sliced deli ham, chopped
3/4 cup mayonnaise
1/3 cup bacon bits
3 tsp. Dijon mustard
1 tube (10.2 oz) large refrigerated flaky biscuits

In a large bowl combine cheese, ham, mayo, bacon bits, and mustard. Split biscuits into thirds. Press onto bottom and up the sides of ungreased mini muffin cups. Fill each with 1 Tbsp. of cheese mixture. Bake at 450 degrees for 9-11 minutes or until golden brown and the cheese is melted. Let stand for a couple of minutes before removing from pans. Serve warm.
