Pardon Me, Do You Have Any Potatoes?

This is an easy recipe that my mom and I have had for years. I have no idea where it came from, but we enjoy it when we make it.

Herb Roasted Potatoes

1/3 cup Grey Poupon Dijon mustard
2 Tbsp. olive oil
1 clove garlic, chopped
1/2 tsp. Italian seasoning
6 medium red skinned potatoes, cut into chunks

Mix all ingredients except potatoes in a small bowl. Toss the potatoes with the mustard mixture and place on a lightly greased 13x9 baking pan. Bake at 425 for 35-40 minutes or until potatoes are fork tender. Stir occasionally.
