The Mustard Makes the Cut

Dijon Crusted Chicken:

1/3 cup dry bread crumbs
1 Tbsp. grated Parmesan cheese
1 tsp. Italian Seasoning
1/2 tsp. dried thyme
1/4 tsp. salt
1/4 tsp. pepper
4 chicken breasts
2 Tbsp. Dijon mustard
1 tsp. olive oil
1 tsp. butter

Place the first six ingredients in a shallow bowl. Brush the chicken with mustard. Roll the chicken in crumb mixture. I an large skillet, cook the chicken in the oil and butter over medium heat approximately 6 minutes on each side until juices run clear.
