Pumpkin Perfection

Today is my sister in law's birthday. Happy Birthday Kerrie. So, today's recipe is for a dessert. However, everything she eats has to be gluten free. So, I am not sure if she would be able to adapt this or not. This is Paula Deen's recipe. We have made this for holidays, friends who have had surgery, parties, etc. It has always been a hit.

Pumpkin Cake

4 eggs
1 2/3 cup sugar
1 cup oil
15 oz. pumpkin
2 cups sifted all purpose flour
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda

Combine all ingredients thoroughly. Bake in greased 13x9 baking dish for 30 minutes at 350 degrees. Frost with cream cheese frosting.

Cream Cheese Frosting

8 oz. pkg. cream cheese
1 stick butter
2 cups sifted powdered sugar
1 tsp. vanilla

Combine all ingredients together until well blended.
