Greek Style Chicken Salad:
1, 10-ounce can chunk white chicken, drained and cut into bite-size pieces
1 cup crumbled feta cheese
1, 3.25-ounce can sliced ripe black olives
1 cup grape-style tomatoes
1 cup diced cucumbers
1/2 cup sliced red onion
3 cups cooked tricolor rotini pasta, chilled
Dressing:
1/2 cup olive oil
1/2 cup white wine vinegar
1 T lemon juice
1 tsp. minced garlic
1 tsp. dried oregano leaves
1/2 tsp. salt
Combine pasta, chicken, vegetables, cheese and olives. Mix together dressing ingredients. Pour dressing over pasta mixture and lightly toss until coated with dressing. Chill until ready to serve. Serves 6-8 people.
(*) -- For variation, you can use Kraft Light Done Right Raspberry Vinaigrette Dressing.
