We love anything that can be made in the crockpot.
Slow Cooker Pork Chops:
6-8 boneless pork chops
1/2 tsp. salt
1/2 tsp. pepper
2 medium onions, finely diced
2 celery stalks, finely diced
1 green bell pepper, finely diced
1 12 oz. can stewed tomatoes
1/2 cup ketchup
2 Tbsp. cider vinegar
2 Tbsp. brown sugar
2 Tbsp. Worcestershire sauce
1 Tbsp. lemon juice
1 beef bouillon cube
2 Tbsp. corn starch
2 Tbsp. water
Place chops in crock pot. Sprinkle with salt and pepper. Add onion, celery, green pepper, and tomatoes. Combine ketchup. vinegar, sugar, Worcestershire, lemon juice, and bouillon. Pour over vegetables and chops. Cover and cook on low 6-8 hours.
Mix corn starch and water until smooth. Stir into liquid in the slow cooker. Cover and cook on high 30 minutes or until thick. Serve over rice.
*This also works with chicken.
