Okay, to set the record straight, James and I have been anything but lazy today. Sunday is in fact our busiest day of the week. That is why we decided to get a bit lazy when it came to what we would have for dinner. A while back, I saw a recipe on Mommy's Kitchen for chicken tenders. We decided that today would be the perfect day for them since we had so much to get done. I had also been wanting to try them. They were perfect with my macaroni and cheese.
Easiest Chicken Tenders:
1 lb. chicken tenderloins (approx. 8)
2 eggs
1/2 tsp. pepper
1 sleeve saltine crackers, crushed
Heat 1/4 inch oil in skillet over medium heat. Beat eggs with the pepper. Place egg mixture into one dish. In a second dish, place the crushed crackers. Dip tenderloins in egg mixture, turning to coat both sides. Then place the tenderloins in the crushed crackers, turning to coat both sides. Cook 4 minutes on both sides. Drain on paper towels.
