This recipe comes from my cousin's mother in law. It was given to her when she got married. We used it this summer for a party. It is quick and easy to make. Serve it with scoop tortilla chips.
Salsa
1 can Bush seasoned black beans, rinsed and drained
1 can whole kernal corn
1 1/2 cups cherry tomatoes, diced or quartered
3 Tbsp. red onion
2 Tbsp. diced jalapeno peppers
3 Tbsp. chopped cilantro
Combine above ingredients, and set aside. Mix the dressing.
Dressing
3 Tbsp. mayonnaise
2 1/2 Tbsp. lime juice
1/4 tsp. cumin
salt and pepper to taste
Combine all ingredients and pour over the salsa. Refrigerate for a few hours before serving.
