It took a little more than a year, but I've finally reached the 200 post mark! Let's mark the anniversary with a chicken recipe that's got a bit of a kick.

Cajun Chicken Fettuccine:

8 ounces uncooked fettuccine
1 onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
2 T olive oil
2 cups cooked cubed chicken
4 tsp Cajun seasoning
1 tsp minced garlic
1, 17-ounce jar alfredo sauce
1/2 cup spaghetti sauce
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese

Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute the onion and peppers in the oil until tender. Add chicken, garlic and Cajun seasoning. Heat through. Transfer to large bowl. Drain fettuccine, and add to chicken mixture. Stir in alfredo and spaghetti sauces. Transfer to greased 13 x 9 baking dish. Sprinkle with cheeses. Cover and bake at 375 for 15 minutes. Uncover and bake for another 15 minutes.
