Return of Cold Weather Comfort Food

I LOVE cold weather, and since it has made its return around here, I decided to embrace it by making this fabulous soup that comes from 365crockpot. I also saw it on Sister's Cafe. I really like tomato soup, but this was unlike any I have ever tried. Hesitation set in as I began to make this, but in the end, even hubby liked it too! Try it, and I think you will like it just as much as we did. I was so excited to make this as I have seen lots of good reviews for it all over the blogosphere. Though I made a few minor changes, you can't go wrong with this recipe. Can't wait to hear back from you once you make this.

Tomato Basil Parmesan Soup:

2 (14oz) cans diced tomatoes, with juice
1 cup finely diced celery
1 cup finely diced carrots
4 cups chicken broth
1 cup finely diced onions
1/2 bay leaf (I had to leave this out and it worked just fine.)
1 tsp dried oregano or 1 Tbsp fresh oregano
1 Tbsp dried basil or 1/4 cup fresh basil
1/2 cup butter
1/2 cup flour
1 cup Parmesan cheese
2 cups fat free half and half, warmed
1 tsp salt (I also left this out.)
1/2 tsp black pepper

In the slow cooker, combine tomatoes, celery, carrots, chicken broth, onions, bay leaf, oregano, and basil (if using fresh oregano and basil; if using dried oregano and basil add those two ingredients in the last hour of cook time). Cover and cook on low for 5 to 7 hours.

An hour before serving, prepare a roux. Melt butter over low heat in a skillet and add flour. Stir constantly with a whisk for 5 to 7 minutes. Slowly stir in 1 cup hot soup from the slow cooker. Add another 3 cups soup and stir until smooth.

Add all back into the slow cooker. Stir and add Parmesan cheese, warmed half and half, salt and pepper. Cover and cook on low for another hour until ready to serve. Garnish with Parmesan cheese and freshly ground black pepper to taste.

This recipe will be linked to Mommy's Kitchen for Potluck Sunday.

Keeping the Pigs Warm

Now that February is almost over, I decided I better share this with you before it was too late. These were one of our little snacks we had during the Super Bowl. They were so easy, and I am shocked that I had never made them until now.

Pigs in a Blanket:

1 can Pillsbury breadstick dough
1 pkg. little smokies
dipping sauce of your choice

Unroll and separate the dough into ten strips. Cut each piece into thirds (I actually cut mine into fourths and they were fine). Wrap each strip of dough around a single smokie and place on a lightly greased baking pan. Bake at 350 degrees for 20minutes.

Dip With A Kick

If you hosted Thanksgiving like we did, and you have as much football to watch as we do, then the last thing you want to be doing is cooking in the kitchen. This appetizer is one that everyone in your crowd should like, and it is vastly different from all of the traditional holiday food.

Italian Dip:

8 oz. pkg. cream cheese
2 Tbsp. milk
1 cup sour cream
1 pkg. spaghetti sauce seasoning mix

Using an electric mixer, beat the cream cheese until smooth. Add all other ingredients, mixing well. Cover and refrigerate several hours or overnight before serving.

Party Starter

I am sharing a recipe for an appetizer that many of you probably already make. I do not get through the holidays without making this, and sometimes we make it twice. It shows up at almost every family gathering we go to for my side of the family. It is quick, easy, fun to make, and tastes good. You can always change it up to meet your needs or suit your taste. The best part about this is that you can make it even when it is not the holiday season.

Cheese Ball:

2 8oz. pkgs. cream cheese
2 cups shredded sharp cheddar
1 Tbsp. chopped pimiento
2 tsp. Worcestershire sauce
1 tsp. lemon juice
dash of cayenne pepper
dash of salt
1/2 tsp. ground mustard
finely chopped pecans or walnuts

Beat the cream cheese until smooth. Add the cheddar and all remaining ingredients with the exception of the pecans or walnuts. Mix well, and form into a large ball. If this mixture is too large for you to handle, then divide it into 2 sections. Chill for at least 1 hour. Roll evenly in the chopped nuts of your choice. I have used both pecans and walnuts and either work fine. Serve with your favorite crackers.

An Appetizing Halloween

At our house, we love to make anything that uses pumpkin. I found this recipe from Taste of Home. It is great for Halloween or even Thanksgiving.

Pumpkin Pie Dip:

8 oz. cream cheese
2 cups powdered sugar (I sift mine)
1 cup canned pumpkin
1/2 cup sour cream (I leave this out)
1 tsp. cinnamon
1 tsp. pumpkin pie spice
1/2 tsp. ground ginger

Beat cream cheese until smooth. Sift in powdered sugar, combining well. Add the pumpkin and the spices, combining well. Enjoy this whatever you like! We love pumpkin bread, but cookies and fruit work well with it also.

Is it Buffalo or is it Chicken?

One of my close friends at work refrerred me to a recipe that her family recently enjoyed. On the way through my search to find the recipe, I came across this instead. It looked so good that I had to post it. By the way, in an upcoming post, I will also give you the other recipe that I was originally looking for. For now, enjoy this! You can also find this recipe in the current issue of Family Circle.

Buffalo Chicken Dip:

2 boneless, skinless chicken breasts, cooked and shredded
6 Tbsp. hot sauce
8 oz. cream cheese, sliced into 1 inch chumks
1/2 cup Ranch or Blue Cheese dressing
1/2 cup shredded cheddar

Shred the cooked chicken. Place it in a skillet over medium heat along with the hot sauce. Heat through. Then add the cream cheese and dressing. Heat until well blended. Add 1/2 shredded cheese, stirring until melted. Place mixture in a serving dish. Top with remaining cheese. Serve warm with your choice of crackers.

Darn Good Dip

This is another recipe that is good for football nights. This comes from a recipe book that myself and my co-workers put together to raise money for the American Cancer Society.

Nacho Beef Dip

8 oz. pkg. cream cheese
8 oz. sour cream
1 lb. lean ground beef
1/4 cup taco sauce
1 pkg. taco seasoning mix
1 1/4 cups Cheddar cheese
1 1/4 cups Monterey Jack cheese

Preheat oven to 325 degrees. Combine cream cheese and sour cream. Beat until smooth. Brown and drain the ground beef. Combine the meat with the sour cream and cream cheese mixture. Stir in the taco sauce, taco seasoning, and 3/4 cup of each of the cheeses. Spoon mixture into lightly greased 12x8 inch baking dish. Top with remaining cheese. Bake 20-30 minutes. Serve hot with tortilla chips.
