Take Two



I have looked and looked and looked some more at the various taco salads on some of my favorite blogs. I finally came to the conclusion to combine what I liked about all the recipes and turn it into my very own. The end result was very enjoyable. My dad would LOVE this chicken because it had quite a kick to it.

Taco Salad:

1 bag Romaine
1/2 bag Chili Fritos
3 chicken breasts (1 lb.)
1 12oz. bottle Frank's Red Hot sauce
3/4 cup shredded cheddar cheese
Ranch dressing

Dump your chicken in the crockpot with the full bottle of hot sauce. Cook on low for 7 hours. Pull chicken out, shred it, and place it back into the crockpot to mix with the sauce. Make sure you coat all of the chicken because this is where it really gets the heat from. Once you do this, the liquid will pretty much be absorbed.

Layer your plate with chips, then lettuce, next is the chicken, top with cheese, and finish off with the dressing. We liked this so much we will be having it again this week. It is too easy and keeps the kitchen from getting so warm.

Tried those fingerling potatoes with Dijon mustard, etc. Friday night and they were a big hit. Definitely getting repeats in Rockville!
