Feeling HOT, HOT, HOT!!!!



Based upon my title, you probably think I am referring to the weather. WRONG!!!! This is a twist on one of our favorite, easy recipes that comes from a dear former co worker. We changed it up a bit to account for the chicken we had leftover from our salad two nights ago. IT WAS HOT, and that is putting it nicely. Surprisingly enough though, we enjoyed it just as much as we did the regular version. Try it, and let me know what you think. As a side note, this would be much too hot for your little ones at home.

Frank's Red Hot Sauce Chicken and Yellow Rice Casserole:

2 chicken breasts********** see note at the bottom
1 pkg. yellow rice, cooked
1 can cream of chicken soup
1/2 cup sour cream
1 sleeve of crackers, crushed
1 stick butter, melted

Preheat oven to 350 degrees. Mix cooked chicken, cooked rice, soup, and sour cream together in a lightly greased baking dish. Top with crushed crackers. Pour butter over crackers. Bake for 30 minutes.

****** The chicken that I used had been in the crockpot all day with a 12 oz. bottle of Frank's Red Hot Sauce. It was leftover from two days ago, and had been sitting in the sauce the whole time. It was HOT!!! If you had used it straight from the crockpot like we did for another meal the other night, it is not as hot.

The original recipe calls for plain chicken. It worked for us either way. Hope you enjoy!
