Simple Salad

ASIAN CITRUS SALAD

3 boneless, skinless chicken breasts, cooked and thinly sliced
6 cups romaine lettuce, sliced
1 can mandarin oranges, drained
1/2 red onion, thinly sliced
1/4 cup radishes, thinly sliced
1 can chow mein noodles
1 cup sliced almonds
3 tablespoons sugar
1 tablespoon water

Dressing:

7 oz. vegetable oil
2 teaspoons sugar
1 pressed garlic clove
1/4 teaspoon ground ginger
1 1/2 ounces soy sayce
3 ounces rice vinegar

In skillet, stir together water and sugar. Add almonds. Cook on medium heat until sugar mixture bubbles and coats almonds. Stir almonds until sugar crystallizes. Pour onto waxed paper to cool, then break into pieces. Rinse and drain lettuce, tear into bite size pieces. Drain oranges. Slice onions and radishes. Toss together in bowl. Add chow mein noodles and sugared almonds. Stir together ingredients for the salad dressing and pour on top of the salad and serve.

Is this the salad you made while I was visiting, minus the chicken?

This is another salad. The salad that you had was the crunchy romaine toss. Either way, they are both good.
